Gourmet molecular winter cooking

  • Tuna and salmon tartare tartlet on a fennel orange carpaccio and fresh olive oil, deep-fried in nitrogen
  • Cream of sweet potato soup with ginger and cinnamon root accompanied by Thai basil oil and a lobster crisp
  • Veal filet cooked “sous vide” with a cocoa pecan chilli crust, port wine sauce, girasole froth and glazed vegetable spheres
  • Lemon cheese soufflé with blueberry brittle parfait and balsamic caramel caviar
  • In addition, an expert in “molecular cooking” enhanced this unusual cookery course with “tips and tricks” from this cuisine which is currently in vogue...
